This breakfast is not only healthy, it is absolutely delicious! This is a perfect meal prep idea for the fall/winter months. There’s just something about apples & cinnamon that make me feel warm inside. Here’s the recipe:


Cook Time: about 15 minutes

Servings: 6

Serving size: 2/3 cup

  • 1 cup Quinoa
  • 1 Tbs Butter
  • 2 Medium Red Apples
  • 1 tsp Cinnamon
  • ½ tsp Apple Pie Spice
  • 1 Tbs Brown Sugar
  • ¼ cup 2% Milk


  1. Dice apples and saute in pan with butter until tender and fragrant. Remove from heat and set aside. Note: I used red apples because they are sweeter. If you like a little tartness, I suggest using Granny Smith.
  2. Add quinoa and 1 ½ cups of water to a saucepan and bring to a boil. Once boiling, stir and reduce to a simmer (covered). When quinoa is tender and has soaked up most of the water you can turn off the burner. This usually takes around 10 minutes. Once done, fluff quinoa with a fork.
  3. Add cooked apples, cinnamon, apple pie spice, brown sugar, and milk to the quinoa. Serve warm!
